I am embarrassed to say Panama City was never "on my list," and all I knew about it was the Panama Canal. Boy–was I missing out. The warmth of Panamaians is unmatched, the food is delicious, and the sights are stunning.

Stay at the Bristol Panama

The Bristol Panama is the definition of elegance. This luxurious hotel is located in the heart of Panama City and boasts breathtaking views of the city skyline.

With its impeccable service (seriously), elegant rooms, and top-notch amenities, it is no wonder that The Bristol Panama has been named the best hotel in Panama by TripAdvisor. The view from the spa is top-tier, and I enjoyed the best massage of my life. Plus, I got to sip on house-made chai in the immaculate "relaxation" room.

Visit Mercado de Mariscos

If you're a seafood lover, a trip to Panama City isn't complete without a visit to the lively Mercado de Mariscos. This bustling fish market offers a colorful insight into local life, with vendors selling a fresh and diverse array of sea treasures, from prawns to octopus.

Come early in the morning to see the market in full swing, or stop by in the afternoon to enjoy a delicious seafood meal at one of the many adjacent restaurants. Either way, don't forget to try the famed ceviche, a local delicacy that will surely tantalize your taste buds. Seriously–I strongly dislike seafood and I LOVED the ceviche served in the little spot directly connected to the main market.

Explore Old Town

Step back in time as you wander the cobbled streets of Panama City's vibrant Old Town, known as Casco Antiguo. This UNESCO World Heritage site is a bustling hub of culture, history, and gastronomy.

Its colonial-era buildings, painted in a riot of color and adorned with bougainvillea, house everything from innovative restaurants and chic boutiques to edgy art galleries. At its heart, you'll find the city's oldest church, the Metropolitan Cathedral–a masterpiece of colonial architecture.

As the sun sets, enjoy the stunning skyline views from one of the many rooftop bars. Old Town is not just a destination; it's an experience.

Eat Dinner at Salsipuedes

An evening at Salsipuedes is a culinary adventure that you can't miss while in Panama City. Located within The Bristol Panama hotel, this restaurant offers an unforgettable dining experience that marries traditional Panamanian flavors with many contemporary Peruvian techniques.

The atmosphere is as warm and inviting as the staff, making you feel right at home from the moment you step inside. Whether you're indulging in the incredible empanadas, savoring the mouthwatering ceviche, or delighting in the rich, flavorful desserts, your taste buds are in for a treat.

The best part? Chef Javi visits the very fish market I suggested above every other day to secure fresh fish for the restaurant. And you know what else–Javi used to work at that very fish market. For an extra fee, you can join Chef Javi on a truly VIP experience exploring the Mercado de Mariscos.

I'll be honest: it was hot and crowded. I was not a happy camper during this experience. However–you have to do it. Plus–the educational film in the visitor center narrated by Morgan Freeman is 100% worth the crowds. You can even order popcorn and sodas to enjoy during the show!

The canal, often referred to as the eighth wonder of the world, is a marvel of engineering and an integral part of Panama's history. You can see ships passing through the canal from different vantage points, but the best way to experience it is by taking a boat tour through the locks.

Personally, I'd rather watch the boats from a grassy spot on the side of the road than in the visitor center.
